In this interview, Dennis Chong, Group Head Sommelier for Potager, tells how the chef and sommelier work together and his growth in the hospitality industry.
What do you do?
I am the group head sommelier at Potager, focusing on the wine and beverage program.
How did you get into the industry?
It was actually a turning point for me. I started in a casino resort, caring for a very large wine cellar. As I began to learn more about wine while working there, people increasingly came to me for advice. My love for wine grew because it’s not just a beverage but human connections, geography, and history, and each bottle tells a story about the land and the winemaker.
What practices do you currently implement or hope to implement to work towards social responsibility and sustainability in the future?
At Potager, we focus on wines that are made using sustainable farming practices. We prioritize selections from small producers who emphasize quality, ensuring that our offerings reflect both environmental responsibility and exceptional craftsmanship.
What can guests look forward to in the upcoming months?
We will continue featuring innovative beverage pairings, both wine and non-alcoholic. Additionally, Oeno will offer various wine flights and host a special dessert event, providing unique tasting experiences that complement Potager’s culinary offerings.
What’s one of your favourite food and beverage pairings?
Luncheon fries with stout.
What’s your wine preference as a sommelier yourself?
I prefer an elegant and food-friendly wine.
What is the connection between a sommelier and a chef in creating a memorable dining experience?
The sense of togetherness. By working together, we understand each other’s approaches and complement each other in terms of food and wine pairing.
What are the key elements of creating a memorable dining experience?
Warm and unpretentious service to guests. Stay neutral in front of guests.
Proudest moment so far?
My proudest moment has yet to come; still awaiting to see Potager receive a Michelin recognition.
What does Dennis Chong do for fun?
Enjoy relaxing with a good beer, watching movies, and indulging in drama series. My current favourite is “House.”
The perfect day off would be…
The perfect day off would involve escaping all worries, spending time at the beach, and enjoying some beer with my loved ones.
What superpower do you wish to have?
Stay young.
