In this interview, Jerald Tan, Restaurant Manager at Entier French Dining, shares some stories from behind the scenes and what guests can look forward to in upcoming months.
What do you do?
I am the restaurant manager at Entier French Dining, where I focus on our wine program and ensuring an excellent experience for all guests.
How did you get into the industry?
It started when I got a part-time job at a restaurant during my school holidays back in 2009. Then I decided to make a career out of it. I’ve worked with Japanese, western fusion, and now I’m focused on French cuisine.
How have you grown in your profession? What have you learned from your start in the industry until now? Are there any misconceptions?
I started out at a Japanese restaurant chain, eventually becoming a captain and learning the ropes of restaurant management. Being part of opening teams for new places taught me loads about running operations and keeping the restaurant reputation. Learned that it’s not just about cooking – managing staff and knowing your customers are key.
What’s one of the most memorable moments you recall from behind the scenes?
Well, there was this one unforgettable moment when a proposal surprise went wrong at the restaurant. One party ended up turning down the proposal, creating a bit of an awkward situation for everyone involved. But my team and I did our best to ease the situation.
What’s one of your favourite food and beverage pairings?
Roasted pork belly and red wine.
The perfect day off would be…
The perfect day off would be a restful night’s sleep and waking up naturally, free from work texts or calls. Simple lunch with my family, followed by some “me time” like take a leisurely stroll by the lake to unwind.
What does Jerald Tan do for fun?
Meeting good friends and catching up over drinks.
What are your long-term goals for the restaurant?
Pretty straightforward. We want to keep serving and maintaining quality, making sure our guests leave happy every time they visit.

Sharing dining experiences with our guests has been amazing. I love exploring other restaurants and enjoying wine tastings with them. It’s been wonderful to build those connections and create lasting memories, not just at Entier but even outside.
What superpower would you like to have?
To be able to transform water into alcohol.
