Seafood

I come from the Land Down Under and while you might be thinking roasts and baked dinners are what Christmas is about, we’re all over the chilled seafood. A traditional Aussie Christmas at the beach, park or in your own backyard, always includes a bounty from the sea. 

Shangri-La Kuala Lumpur has several seafood packages that you can order in addition to a roast – check the order form directly to pick your preference. We’re delighted with the quality of tiger prawns, mud crab and slipper lobster delivered to our home. All too often we’ve found seafood, especially those on buffets in KL, to have no flavour. These creatures have just the right amount of saltiness to them and were cooked, leaving the meat moist but with just a touch of firmness to the bite.

We can also attest to the quality of the sushi and sashimi coming from the Shangri-La kitchen. With the expertise of the Japanese restaurant crew from Zipangu, you can be guaranteed drool-worthy cuts. Pictured below, you’ll find salmon and ahi tuna sashimi (cliché melt-in-the-mouth), California rolls and flamed Norwegian salmon nigiri. Wasabi, soy sauce and pickled ginger are packed as well, really making the meal devour-ready.

Salad

Adding a bit of guilt-free balance to the line-up, kale salad with apple and toasted almonds is bright and fresh. I love the crunch from the kale and the nuttiness from the almonds. My dinner guests don’t think it’s appropriate to have healthy food at Christmas, but this bowl makes me happy.

Main

The star of the show though is a whole roasted turkey with sauces and sides. Prices vary. A medium bird serving four to seven people is priced at RM700, while the large is suited for eight to twelve and priced at RM800. Alternatively, you can just request the turkey with a medium coming in at RM500 and large at RM600.

We’d rather not do any of the cooking ourselves and so get the works. Turkey can tend towards the drier side as it’s naturally pretty lean meat, so the accompanying sauces are pretty important. Both the giblet gravy and the cranberry chutney are delicious recipes that get drizzled not only over the turkey meat but onto the tasty chestnut raisin stuffing too.

There are plentiful sides, and even though this order says for four to seven people, our four stomachs barely make a dent in the bird or the veg. All of us could easily eat the same amount again, and there’d still be leftovers (but aren’t the remains the best bit of holiday feasts anyway?). Braised red cabbage, Brussels sprouts, honey-glazed carrots, and potato both mashed potato and roasted give us plenty to fill our plates.

Dessert

With executive pastry chef Roberto Hernandez heading up desserts, you’d be wise to order more than one (or perhaps not, as he openly reveals that the trick to delicious pastries is butter, lots of it!). Apple Pie is more of a crumble than a pie with a buttery crust and crunchy top. This disappears way too quickly. Fortunately, we have back up with Christmas Pudding and Stollen. The puddings are adorable with their presentation as individual spheres. They’re superbly moist and full of fruit and missing only one ingredient – booze. We add a spoon of dark rum, and soon we’re all singing a very merry Christmas.

Wine

Making the Shangri-La KL’s service a complete package is the opportunity to also top up your order with wine. The hotel holds an extensive collection with house-pouring, mid-range and some very exclusive bottles under their roof. I’ve chosen a Pascal Bouchard Chablis Premier Cru’ Fourchaume’ as I think it will do well with our seafood before we move onto something more intense with the turkey. 

Stationed in the north of Burgundy, the Chablis region is known for chardonnay grapes producing more acidity rather than fruit and often with a thread of minerality. This particular wine is full of finesse with a bouquet of white peach and a hint of vanilla. It enters the mouth with a bold beginning and gratifying acidity. It continues with a round richness, good structure and finish.

    OMG I remember that cos I used to collect Australian stamps when I was much younger with an OZ lady who moved to NZ then to Tonga. So I got quite a bit stamps from NZ and Tonga too.
    Anyway, look this up “Aussie kids” 1987 postage stamps. See if you can recall all of them.
