In this interview with Akshar Chalwadi, we learn some stories from behind the scenes of one of Kuala Lumpur’s most noteworthy restaurants.

What do you do and how did you get into the industry?
I am the operations manager and mixologist at Nadodi, Engaging Nomadic Cuisine. I had always wanted to do something less than ordinary and wanted to have an element of fun added to my profession and felt there is no other place which can be more fun-oriented than the bar.

Share with us an interesting story from behind the scenes.
During my earlier days, I loved to create cocktails and there was one particular instance a celebrity guest was at my station. He was so famished by a particular cocktail but suggested a variant and was open to experimenting, even though it wasn’t on the menu. He was impressed and that cocktail was almost ordered every time he made a visit and it went on to become a crowd favourite. The management decided to give a name to the cocktail and eventually it went on to take the centre stage on the menu. It is still called AK.

What’s the best/ worst part of your job?
It is challenging and there’s never a dull moment,

What’s your favourite meal/ drink at Nadodi?
No Name Cocktail (you have to relish it before I give it out the details).

What’s one of the most memorable parts of your career?
It was during my bartending experience that I realized the real potential in me, which pushed me the extra mile and led me to win the coveted “Emerging Young Bar Tender” of India award conducted by Bacardi.

The perfect day off would be…
I’m a hardcore rock music fan. Metallica burns my veins. So an ideal day off would be going on a long drive with blaring music in my car.

A day in the life of Akshar Chalwadi is…
Acquiring knowledge never stops to amaze me. The more I create, the more open the options become. The added role of operations manager pushes me to find perfection in whatever I do, from overseeing reservations to the service sequence and creating an engaging experience to the guests and finally to draft out the budgeting and the sales report is my daily deal.

What do you do for fun?
Listen to music and I love playing the guitar.

What’s something you’d like guests to know about Nadodi?
It’s a place where food and drink complement each other and also an ambience of engaging experiences where individuals are blown away by the stories.
