The Yum List talks with Chef Tan of Five Sen5es, Chinese restaurant in the Westin Kuala Lumpur. 

How did you get into the industry?
Coming from a family of chefs and a family who has been in the restaurant business, it only seemed natural to follow in my mother’s footsteps – who is also a chef in Singapore
Where have you worked around the world?
I’ve previously worked in Singapore, Taiwan in 2000, Japan from 2001 to 2006 and Indonesia in 2009.
Share with us an interesting story from your F and B experience.
I can’t really think of anything interesting, but what I can say is that through my travels and experience, I’ve managed to learn a lot about peoples different cultures and beliefs. And for that I am truly blessed.
What’s your favourite Malaysian food?
Hainanese Chicken rice
What’s your personal favourite dish on the menu at Five Sen5es?
Rice Wine Pork Trotter
What’s one of the most extreme dishes you’ve ever made?
There’s not one particular dish that comes to mind, but when I was in Singapore I had to prepare purely vegetarian dishes for 10,000 people in one sitting. This was for an event attended by Buddhist monks. Having to create or come up with different varieties of vegetarian dishes is not as easy as it sounds.
What’s something you’d like people to know about the style of food you prepare at Five Sen5es?
My style and what I always strive to do is to cook using the freshest of ingredients and to cook healthy yet delicious dishes.
What’s your ideal food and wine/ liquor pairing?
Roast or fried dishes with red wine
Your perfect day off would be…
Climbing mountains, watching movies, and sleeping
What can guests look forward to at Five Sen5es in 2013?
Guests can look forward to more exciting dishes and promotions.
