Mosaic offers casual street side dining in both air-conditioned comfort and warmer outdoor sidewalk tables. The compact space, walled with glass and dotted with potted plants, is bright and cheery during the day, and provides a peek into the easy-going pace of after-work relaxation of unhurried passerby’s in the evening.
An unexpectedly large selection of house-baked breads lines the shelves, and hot items are found in the glass display where pies, quiches and a variety of sweet indulgences disappear nearly as quickly as they are replenished. Aside the counter is a tempting array of ice creams, also made in the Hyatt’s kitchen.
A cross section of drinks is available including beers, spirits, cocktails, house wines, hot beverages and a variety of mocktails, juices and carbonated drinks. Hubby quenches his thirst with a Heineken (RM22) and I with an Aussie Bin Ends Pinot Grigio (RM25). The white sends faint citrus
aromas to the nose and a mix of crisp white fruits such as green apple and lychee swirl around the palate. Its slightly acidic finishes would go well with salads, and serves to slice through my oil-rich salmon, which I order later as my main.

House White Wine
A short a la carte menu supports the baked selection, and, as in most Hyatt hotels, guests are invited to ask the kitchen for exactly what they want. Chefs are happy to make something to suit customer’s preferences and warm them up to the idea with suggestions in the Create Your Own menu. Choose your main dish (tenderloin, salmon, chicken or tofu), your sauce (jus, pesto, extra virgin olive oil or tomato salsa) and two sides (steamed fragrant rice, roasted mushrooms, grilled herbed tomato, roasted potato with rosemary and garlic, steamed vegetables, green salad) to design your desired dinner.
Our orders arrive as two large colourful plates that immediately have our mouths watering with whiffs of caramelization of flesh fresh from the pan. My Grilled Norwegian Salmon (150g, RM58) with roasted mushrooms and steamed vegetables is a little more than my stomach can do justice to. Hubby steps in and helps out, so no waste here.

Grilled Salmon
His Australian Beef Tenderloin (180g, RM81) is a large juicy hunk of meat accompanied by a green salad and grilled herbed tomatoes. A pepper sauce is thick and rich and has us thinking of roasted potatoes for sopping up its remains. But, then we remember the soft white bread rolls that were served with our drinks as we browsed the menu and decide them perfect vehicles for dunking.

Returning to the ice cream I spied on arrival, we finish with a scoop of coconut, mango and rocky road flavours. We dine in as it’s our first night at the hotel after a long week of work and we’re eager to hit the sack. With enhanced energy however we might choose to stroll along the adjoining
waterfront with our treats.

Ice Cream
We depart with tummies and tastebuds satisfied and thoughts of a return visit, perhaps for an Illy coffee and slice of cake tomorrow.

    What degree of "cookness"??? ( That may not be the
    correct epicurean word, methinks!)
    Looks well done.
    I do like the sauce being on the side.
    As you know in Australia – club and counter
    lunch style steaks come with the sauce from one
    end of the plate to the other – ha ha! YUCKY!!!
    I do so much like a tangy white dry wine.

    That dessert looks fantastic.
    Hope the evening walk along the esplanade wore it off??

    I enjoyed your previous blog on "talking to the chef".
    It is good to know the other side of their lives.

  5. The salmon looks good. I have had 3 meals as in lunch, dinner and lunch all salmon all in a row…something different tomorrow.

  8. Colin and Dedy, Steak was medium. Unfortunately my night photos pale in comparison to my daytime shots. I'm not able to capture great colour at night with my little point and shoot camera. Colin, We 'should have' went to the esplanade, but somehow ended up with more wine and then went to bed.
