During our three-day stay at Banyan Tree Phuket we savour a number of dishes to our liking at this breezy café.
Starters
I can’t go past Pomelo Salad on any menu, let alone in Thailand. This one brings juicy generous chunks of citrus fruit mixed with fresh prawns and a tangy coconut dressing. Green herbs aplenty are twirled through the dish making it a wonderful choice for the warm midday weather in which we dine.

The Banyan Greek Salad is one of the café’s signatures. Crisp romaine lettuce leaves are layered across the plate and hold a pretty sprinkling of chopped cucumber, olives, cherry tomatoes, feta and red onion. Besides a light vinaigrette, there’s also a few drops of a creamier red sauce, which gives the salad the Banyan twist. Flat toasted rye on the side is a perfect mate for any remaining dressing.

Smoked Salmon Salad comes as a recommendation from a fellow diner. We’re happy we take the suggestion as it turns out to be one of the most fetching versions we’ve seen in some time. Fresh pink flesh swirls the middle of the plate, framed by crumbled eggs, fine red onion rings, black olives, gherkins, and cocktail onions. Verdant leaves and a wedge of lemon finish it off.

Mains
Both meaty and vegetarian options are available on the menu, and we learn that chefs are willing to listen to specific dietary requirements to make things to order as well.
Hubby surprises me with his order of Vegetarian Pizza. It comes out covering an entire dinner plate, more than enough to share, on a thin crispy base. There’s a wealth of roasted veggies and fresh rocket leaves on top, but even more gooey stringy cheese (yum!). I can see why hubby thought it an acceptable veggie option.

Club Sandwich is hubby’s second high-carb request and it proves equally satisfying. The triple-decker is packed with lettuce, tomato, egg and bacon and held together with a giant spoonful of mayonnaise. The plump crisp fries make up the other half of the plate and even between the two of us we have trouble finishing them all.

Sea Bass Soup is a rich and hearty broth filled also with mussels alongside fleshy chunks of white fish. A single sprig of parsley adorns the top, and our spoons are already hitting the bottom of the bowl as we haven’t said a word since first mouthful.
After hubby’s lighter choices yesterday, he goes all out with a Beef Burger and fries today. A fat juicy patty is covered in melted cheese and provides enough flavour of its own, pushing aside the need for any mayo or sauce. Slices of tomato, onion and lettuce add some health, and a simple white roll sandwiches it all together. The fries are crisp: fine examples.
Desserts
Holidays almost always seem to justify dessert and Banyan Café has a number to satisfy a sweet craving. Pretty individual servings of cakes, pies and tarts catch more than an eye or two in their chilled displayed counter. Homemade ice cream though is something I have little resistance for, especially with flavours such as Espresso, Lime and so on.  We settle on a Coconut and Chocolate and delight that each is served with a crunchy biscotti stick and lavishly large scoop. The coconut wins hubby’s approval with its nutty flavour, while the velvety chocolate has my adoration with its creamy smoothness.
